Low Carb Cabbage Noodle Stir Fry

I have eaten this meal for dinner probably 85% of the time for the last 5+ years. I go through my summer phases when I eat more salads instead because it’s too hot for stir fry, but I always come back it.

I love it because it’s easy to change the taste of the whole meal easily by changing the seasonings used, it’s filling and you get to eat a lot of food without a lot of calories, and it’s healthy and delicious!

Ingredients:

  • 1 bag coleslaw mix (shredded cabbage and carrots)

  • 1 bag shirataki noodles

  • 1 serving ground beef cooked (or other protein of choice)

  • Curry powder, Garlic powder, Chili powder, Cayenne pepper, Sea Salt (experiment with spices you like)

  • Soy sauce

Directions: Makes 1-2 servings

  1. Heat pan on medium heat

  2. Spray a sauté pan with coconut oil cooking spray

  3. Empty bag of coleslaw mix into pan

  4. Spray again, add seasonings you like. (I used to love the McCormick Asian blend seasoning for this but I think they discontinued it 😡)

  5. Rinse and drain the shirataki noodles (I also like to cut them up with scissors)

  6. Mix seasoning in with cabbage and let sauté stirring occasionally

  7. When cabbage is cooked to your liking, add some soy sauce and the shiritaki noodles

  8. Add cooked protein (beef, chicken, shrimp, tofu etc.) and 1tsp-1 Tbsp coconut oil or sesame oil

  9. Stir and cook everything together for 10 more minutes or so adding more soy sauce if necessary.

Options:

Add cooked jasmine rice if you want more carbs
