Pumpkin Protein Pancakes

Pumpkin Protein Pancakes (or Muffins)
Makes 1 Serving (double this for men)
1/3 cup dry oats
1/4 cup canned pumpkin
1/2 cup liquid egg whites (can include 1 whole egg for some healthy fat)
1/2 scoop protein powder of your choice
1 tsp. vanilla extract
Cinnamon to taste
2 packets sweetener (optional)
Preheat pan on medium heat
Blend together ingredients (again I use my nutribullet or hand blender)
Pour into pan or muffin tins (Silicone is the best. Make sure you spray them well)
Cook and flip as you would with regular pancakes or Bake at 350 for 15-30 minutes until done if baking them as muffins
Extra options:
Sprinkle in some mini chocolate chips for a little something extra
I like to top the pancakes with some cottage cheese and fruit (and remove the protein powder)
This is an easy recipe to make ahead of time and take with you anywhere.
This meal contains a good balance of complex carbs and protein to keep you satiated and on track to achieve your goals.
